Couscous Fruit Salad

Ingredients
2 Tablespoons extra-virgin olive oil
2 Tablespoons orange juice
1 Tablespoon cider vinegar
2 teaspoons shallots, finely chopped
1/4 teaspoon salt
1/4 teaspoon freshly ground pepper
2 cups whole-wheat couscous, cooked
1 cup chopped nectarine or peach
1 cup mixed fresh berries, such as blueberries and raspberries
2 Tablespoons sliced almonds, toasted

Directions
Whisk oil, orange juice, vinegar, shallots, salt and pepper in a large bowl. Add cooked couscous, nectarines, berries and almonds; gently toss to combine.

Ensalada de Couscous y Fruta

Ingredientes
2 cucharadas de aceite de oliva extra virgen
2 cucharadas de jugo de naranja
1 cucharada de vinagre de sidra
2 cucharaditas de chalotes, finamente picados
¼ cucharadita de sal
¼ de cucharadita de pimienta recién molida
2 tazas de couscous integral entero, cocido
1 taza de nectarinas o duraznos, picados
1 taza de bayas mixtas tales como arándanos y frambuesas
2 cucharadas de almendras rebanadas, tostadas

Instrucciones
Mezcle el aceite, jugo de naranja, vinagre, chalotes, sal y pimienta en un recipiente grande. Agregar el couscous cocido, nectarinas, bayas, y almendras; revolver gentilmente para combinar.
