Rice Wine and Basil Vinaigrette

Makes 2 cups

¾ cup rice vinegar
1¼s cup olive oil
1 Tablespoon Dijon mustard
1 teaspoon shallots, minced
2 Tablespoons fresh basil leaves, minced
kosher salt and pepper, to taste

1. Place the vinegar, dijon, and shallots in a food processor or blender.
2. With the motor running, slowly add the oil to create an emulsification.
3. Season with salt and pepper and stir in the basil or blend it in as well.

Rinde 2 tazas

¾ taza de vinagre de arroz
1¼ taza de aceite de oliva
1 cucharada de mostaza de dijon
1 cucharadita de chalotes, picados
2 cucharadas de hojas de albahaca fresca, picada
sal kosher y pimienta, al gusto

1. Coloque el vinagre, dijon, y los chalotes en un procesador de alimentos o en la licuadora.
2. Con el motor en marcha, lentamente agregue el aceite hasta crear una emulsión.
3. Sazone con sal y pimienta, agregue la albahaca picada o tambien molida.
