Winter Mac and Cheese

Winter Mac and Cheese

Serves 4-6

Ingredients
½ head cauliflower, cut into large dice
½ head of broccoli, cut into large dice
½ cup of peas
1 pound whole wheat pasta
2 Tablespoons butter
¼ cup flour
1½ cups milk
1 cup vegetable broth
2 cups sharp cheddar cheese, shredded
1 Tablespoon dijon mustard
salt and pepper
a handful of fresh herbs, if desired

Directions
1. Bring a large pot of water to a boil. Add a pinch of salt, and then both the cauliflower and broccoli, and cook until crisp-tender, about 4 minutes.
2. Add the peas and cook for 1 minute.
3. Transfer the vegetables with a slotted spoon to a large bowl. In the same boiling water, cook the pasta until al dente then drain in a colander. Combine the pasta with the bowl of vegetables.
4. While the pasta is working, melt the butter in a saucepan over medium heat.
5. Whisk in the flour and cook for 1 minute, then whisk in the milk and vegetable broth and cook until thickened, about 5 minutes.
6. Stir in the cheese.
7. Whisk in the mustard and season with pepper.
8. Mix the cheese sauce into the pasta and vegetables. Add the fresh herbs, if desired. Enjoy!

WHAT TO DO WITH LEFTOVER VEGETABLES…If you have extra seasonal vegetables leftover from your Winter Mac and Cheese, they are a great addition to any salad! Or you could also make a delicious breakfast! Make an omelet or mix with scrambled eggs. Yum!

Macarrón con Queso de Invierno

Para 4-6 personas

Ingredientes
½ cabeza de coliflor, cortada en trozos grandes
½ cabeza de brócoli, cortada en trozos grandes
½ taza de chicharos
1 libra de pasta de trigo integral
2 cucharadas de mantequilla
¼ de taza de harina
1½ tazas de leche
1 taza de caldo de verduras
2 tazas de queso cheddar, rallado
1 cucharada de mostaza de dijon
sal y pimienta
un puñado de hierbas frescas, si se desea

Instrucciones
1. Ponga una olla grande con agua a hervir. Añada una pizca de sal, a continuación, agregue la coliflor y el brócoli, cocine hasta que estén tiernos, cerca de 4 minutos.
2. Añada los chicharos y cocine por 1 minuto.
3. Transfiera las verduras con una cuchara espumadera a un tazón grande. En la misma agua hirviendo, ponga a cocer la pasta al dente y escurrala en un colador. Combine la pasta con las verduras del tazón.
4. Mientras que la pasta está trabajando, derrita la mantequilla en una cacerola a fuego medio.
5. Añada la harina y cocine por 1 minuto, luego agregue la leche, el caldo de verduras y cocine hasta que espese, aproximadamente 5 minutos.
6. Agregue el queso.
7. Incorpore la mostaza y sazone con pimienta.
8. Mezcle la salsa de queso con la pasta y verduras. Añada las hierbas frescas, si así lo desea. Disfrute!
